5 oz. goat cheese
2 Tbsp. minced chives
1 Tbsp. chopped parsley
1 clove garlic, minced
4 sandwich rolls
2 red Bell peppers
24 slices Columbus Italian Dry Salami
Extra virgin olive oil for drizzling
Small handful of arugula
In a small bowl, stir the goat cheese briefly until smooth. Add the chives and parsley. Mix well. Slice rolls in half. Spread the goat cheese mixture on one half of each roll. Top with peppers and salame. Drizzle olive oil on second half of bread and top with arugula.
Close sandwiches and serve.
Tip: Plain goat cheese or herbed goat cheese may be used.
